Almond Butter Hemp Seed cookies - Sugar-free and gluten-free

I was having a cookie craving so I took another stab at Almond Butter Hemp Seed cookies - as always, gluten-free, but this time sugar-free too!  Here's what I threw together:

1 cup almond butter (make sure it is JUST almonds, no sweeteners for sugar-free)
3 eggs
1 1/2 cups hulled hemp seeds
1/2 cup "4 grain cereal"(Organic amaranth flakes, organic red and/or white quinoa flakes, organic buckwheat porridge, chia) by GoGoQuinoa (could be replaced with any of these ingredients - such as just quinoa flakes, etc. - or simply increase hemp seeds 1/2 cup)
1/2 cup "Sprouted Chia and Flaxseed Powder" by (could be replaced by flax meal or chia powder -- or chia for a slighty crunchier texture)
1 tsp baking soda (aluminum-free)
1/2 cup Xylitol (you can substitute sweetener of choice, such as stevia, or sugar if you don't care about sugar-free) 

Preheat oven to 350.  Mix ingredients together in a bowl.  You can do wet and dry separately, or do what I do and mix wet, and then put dry on top and mix in baking soda before fulling mixing into the wet, to save a bowl.  Use a tablespoon to scoop mixture and roll into balls and flaten with your hand on the parchment lined baking sheet.  Put in over for about 10 minutes.  Enjoy!!  This recipe made about 20 cookies.

Best right out of the oven - but great left-over too - I don't even feel bad about eating these for breakfast! :)
