Cocoa Almond AND Cinnamon Almond cookies from leftover almond meal

Do you make your own almond milk?  Ever wonder what to do with the leftover almond meal?  Here's a couple recipes that don't even require you to dry the meal out first!  These recipes were adapted from the following recipe: Chocolate Heart Cookies - The Spunky Coconut


Cocoa Almond Cookies
Ingredients:
1 egg
1 tbsp of vanilla
1/4 cup cocoa powder
1 heaping tbsp of coconut butter
1 heaping tbsp of almond butter
1 tbsp of water
2 tbsp xylitol
3 drops stevia
1 cup of wet almond meal (leftover from making almond milk with 1 cup soaked almonds)

Whisk egg.  Add vanilla and cocoa powder.  Mix coconut butter, almond butter, water and sweetener - heat slightly to soften.  Add to bowl.  Add almond meal and mix until smooth.  Add a bit more water if needed to mix thoroughly (a tsp or so).  Roll into small ball and flatten onto pan lined with parchment pare or silicone liner.  Bake for 20 minutes* at 375.  Enjoy.  Keep in sealed container in the fridge.

If you like it sweeter - adjust sweetener to taste or sub in another sweetener such as honey, coconut palm sugar, maple syrup, etc.

I try to avoid cocoa/caffeine later in the day, so I came up with this recipe as an alternative:

Cinnamon Almond Cookies

1 heaping tbsp cinnamon
1/4 cup almond butter
1 tbsp water
2 tbsp xylitol
3 drops stevia
1 cup of wet almond meal (leftover from making almond milk with 1 cup soaked almonds)

Whisk egg.  Add vanilla and cinnamon.  Mix almond butter, water and sweetener - heat slightly to soften (either in small sauce pan or microwave).  Add to bowl.  Add almond meal and mix until smooth.  Add a bit more water if needed to mix thoroughly (a tsp or so).  Roll into small ball and flatten onto pan lined with parchment pare or silicone liner.  Bake for 20 minutes* at 375. Enjoy.  Keep in sealed container in the fridge.

*Note:  These cookies will still be quite moist after baking.  You can increase baking time a bit if you like, but because of the wet meal, they will not have the texture of a regular cookie.
